When Berkeley met Briony

Browse By

Recently, we had the privilege of chatting with semi-finalist of this year’s Great British Bake Off and former QEH teacher, Briony Williams. In this Berkeley Bite, we cover numerous topics ranging from how her experience on the Bake Off has affected her personal life, the impact of fame on mental health as well as discussing how we should define ourselves in this age of continuous social networking.

Beyond a conversation, Briony also provided us with one of her favourite recipes for a Chocolate Orange Cake, which can be found below the video. We will certainly be trying it and we would love to hear the results of any of our readers’ efforts!

To decorate:

Lots of chocolate orange goodies!! I used chocolate orange biscuits, Terry’s chocolate orange (regular and miniatures) and a bar of orange flavoured chocolate.

Method

1. Oven on to 180°C fan. Grease and line 3 x8 inchtins.

2. Flour, sugar, salt, cocoa powder and baking powder in a large bowl. Whisk to combine.

  1. Oil, eggs, orange extract, orange zest and milk in a bowl. Whisk to combine.

4. Add coffee to boiling water. Mix well.

5. Add egg mixture to flour mixture. Mix to combine. Add coffee mixture. Mix well to combine.

6. Divide between tins. Bake for 30-35 minutes until skewer comes out clean.

7. Leave to cool in tins then tip onto cooling racks.

8. Use serrated knife or cake leveller to level cakes.

9. Make dark chocolate ganache. Break up chocolate in bowl. Heat cream in pan until steaming and almost boiling. Pour over chocolate. Leave for 3 minutes. Stir well to combine. Place in fridge for 30 minutes. Use electric whisk or stand mixer to whisk ganache until paler and thicker.

10. Make white chocolate ganache. Break up white chocolate into bowl. Heat cream in pan until steaming and almost boiling. Pour over chocolate. Leave for 3 minutes. Stir well to combine. Add enough orange food colouring to reach desired colour. Stir to combine.

11. Build cake. One cake on plate/board, top with ganache and smooth. Repeat with next two cakes. Add ganache to sides and smooth. Put in fridge to chill for 15 minutes.

12. Use a teaspoon to drip the orange ganache from the top edge of the cake. Make drips at random around cake.

13. Top with chocolate orange goodies!!
